Cake recipe - Lemon Drizzle sponge sandwich

Sponge ingredients
6oz butter
6oz sugar
3 eggs
6oz self raising flour
zest of 2 lemons
squeeze of fresh lemon juice
2 sandwich tins


buttercream

2oz butter
4oz icing sugar

lemon icing
icing sugar
lemon juice

Put the butter, sugar, eggs and sift flour into a mixing bowl/electric mixer and stir until smooth. Grate the zest of 2 lemons and add to the mix, to complete the mix cut one of the lemons in half and give it a good squeeze into the mix.

Seperate the mix into the 2 sandwich tins and put in the oven for 20-25 minutes at 190 degrees

Once the cake is cooked and cooled, mix the buttercream filling and place inbetween the 2 sponges.

To finish use a small amount of icing sugar (apparently my mum doesn't measure this exactly) and use the juice of a lemon to make a thick lemon icing for the top of the cake. This can be adjusted to suit your tastes, I do love a nice thick icing but a drizzle works just as well :)
