Merrily we knit a'round skirt in Sirdar Baby Bamboo

Cappuccino muffins


225g butter (plus extra for greasing)
225g self raising flour
1 tsp baking powder
1 tsp cocoa powder
225g caster sugar
4 eggs
3 tbsp instant coffee granules dissoved in 2 tbsp hot water, cooled

Frosting
115g white chocolate
55g butter
3 tbsp milk
175g icing sugar

Preheat oven to 180 degrees/Gas Mark 4.

Sift flour, baking powder and cocoa into a bowl and add butter, sugar, eggs and coffee. Mix until smooth (or throw in the Kenwood Chef) and pour into muffin cases...12 should be enough.

Bake in a preheated oven for 30-40 minutes or until risen and cooked through.

Leave to cool before making the frosting.

To make the frosting put the chocolate, butter and milk in a saucepan and stir over a low heat until the chocolate has melted. Remove the pan from the heat and add the icing sugar, stir until smooth and add to the muffins.

Voila...yummy coffee muffins!
